An oldie but goodie alert.... today lets take it back to the good'ol hamburger helper days.
This recipe is the plant based remix to the original. Hamburger helper was perfect for those families that needed something quick and simple to cook for dinner. The problem with most box items sold in grocery stores is, what's truly in the box?
When it comes to these corporate chain food companies, it's important to check what's truly in your food. That's one of the best things about being plant based, knowing what's in your food, and what it does for you..... also, not to mention, turning some of your favorite childhood staple recipes, into vegan friendly meals.
This recipe is quick and easy, also something that can be made ahead of time and used as meal prep during your busy week.
So instead of the mystery mix packet of seasoning, you'll be using fresh seasonings like nutritional yeast, salt, pepper and beefless broth.
For your milk, you can use any of your favorite unsweetened plant based milk alternatives. I like to use plant based"buttermilk" for recipes such as this, its a great milk alternative and thickening agent.
So without further ado, let's get into it.


Vegan Hamburger Helper
Ingredients:
14-16 oz noodles of choice (cooked)
16 oz "meat" of choice - I used ground seitan
1/2 onion (diced)
2 cups plant based cheese of choice
(1) 14-14.5 oz diced tomatoes
2 cups plant based milk (I used Mill It Farms buttermilk)
(1) beefless cube or 1 cup beefless broth
Salt and Pepper
(1) cup ketchup
(1/2) cup nutritional yeast
(2) tbsp butter
1/2 cup green onions (diced)
Oil for Frying - I use high heat oil like avocado
Instructions:
In a large frying pan, add oil and heat over a medium high flame. Add in your onions, and cook until translucent.
Add your "meat" alternative, and cook for 10 minutes, using a spatula to crumble while cooking (you may need to add more oil to keep from sticking). Remove when browned and crumble, and set to the side.
Return pan to heat, next adding your butter, scraping to remove all the residue left at the bottom - this is the good stuff with all the flavor. When melted, add your milk and "meat" - stir and add your beefless cube or seasoning.
Add in your canned tomatoes, noodles and mix well. Next, add your cheese and also mix until this is melted.
Add in your 1/2 cup of nutritional yeast, ketchup, salt/pepper and mix until well combined.
Last garnish with fresh green onions.
Serve immediately, and enjoy!
